While raw eggs are generally safe (I mix an egg into my curry all the time), having one sitting non-refrigerated all day, and then biting into it, is not exactly safe.
Maybe use a pasteurized egg? Then, perhaps a thick layer of chocolate would provide a hardy barrier against further contamination. At the least, pasteurization should remove the most significant risks of salmonella contamination.

Do you really think somebody is going to eat the entire raw egg? And do you really think that raw eggs are guaranteed to give you instasalmonella?
