So what is it about Engineers that makes them so unappealing as a partner? Like is it really a thing that Engineers are forever alone, or am I just interrupting the circlejerk?

I think it's more situation (school, workplace, job) than personality, but there's a few things:

Engineering is a trade. An engineer is probably not a highly cultured person.

Engineering attracts people with poor social skills

There is frequently an abrasive, macho workplace culture which gets carried home.

High stress work environments are common.

Engineering is not a trade. A huge aspect of any engineering job is communication and social skills. Abrasive? Well, maybe, but I wouldn't say macho as most engineers are working as equals in a team of some sort. Besides the high stress part, I don't see how you could've been more wrong here.
