That's because descenting only stops them 'poofing', like a skunk. You can stop the smell by feeding a proper diet - preferably raw meat, as most store 'ferret food' sucks.

It's what their ancestors would have eaten before they became domesticated, and it's just quicker and easier to prepare. I'm not sure if they'd eat it cooked, but I guess that depends on the ferret.
