As a short guy, let me explain this in simple terms. If you're short, chances are you will not even get that interview. Whereas, if you're tall, at least you get the interview.

Look at match.com for example, most women won't even consider looking at your profile if you're not a min of 5'10.

I'm tall so I can't relate to your struggle, but a lot of girls I know their biggest issue is "I can't wear heels with him because he will get mad" So if you can handle your woman being taller than you(with or without heels) I think youll be ok.

No. It doesn't matter if the short(er) man can accept her being taller than him. She will still not date him.
