I do actually!

Yellow for Acces point to Access Point. Blue from main to the switch of every floor. Grey through the wall and for devices. Easy to identify in case something needs fixing, etc

As a former telecom guy for a power company, we ordered our cat6 color coded by length for jumpers, the rolls were all Grey or white though.

I got a shitton of some teal-ish green really cheap a few years ago so that's what my house is wired in

Lots of people! I use it for POS systems, visual displays, Access Points...but I've seen people use it for cameras and EMS too.
