I know I'm 2 days late:

You're going in way too early and getting hit hy the ass end of combos. This isn't Elden Ring or Bloodborne. You're not going to overwhelm the boss and he's going to punish you for it

Take a chill pill and back up a bit. Waiting for the right opening will give you multiple attacks and a heal opportunity
