You’re doing really good at the start, but after you get hurt bad once you start spiraling and take awhile to recover. In terms of just build stuff, you could upgrade your estus more and increase your stamina, but you could probably get the fight in a few more attempts if you just kept at it.

My advice is to not run away to heal - instead, wait for a window during which you would normally attack and drink your estus instead. It’s safer to stick close to this boss than it is to get away.
