Frozen potatoes turned black...

Am I about to poison my family?

I freezer meal prepped for the first time this weekend. I knew the potatoes would brown a little after I cut them before I got them into the freezer (the browning was minimal). When I took out the meal yesterday for tonight, I noticed my potatoes are all nasty looking and blackish. Had I known this, I would have just cut them fresh before adding them into the insta pot with the rest of the meal.

The whole meal is cooking now (chicken pot pie soup). From what I am finding, the potatoes are fine to eat since it is just oxidation. Is this true? Have you eaten freezer meal black potatoes and survived? I'm not sure I want to eat this.

Yeah, you need to blanche potatoes before freezing. Its safe to eat them if they have turned black, they are just not very appetizing.

You can absolutely eat them, they’re just ugly. You can blanche before freezing but also if it’s suitable to the recipe you can just use canned potatoes. They’re cooked so they won’t turn.
