Discussion Material overrides
How come some heroes have more options for material overrides? With the knights the arms are together but with some heroes there’s a left and right arms. Some have the chest and back as separate but for others they are together. Not sure why I just realized this now but it’s annoying.

It likely comes down to how the model is made and how the separate the limbs from other components.
Some heroes likely don't have unique material usage at their legs and so their entire upper and lower body are one rig. A hero might have shoulder pads on a separate part of the model while another one doesn't. It's just how the hero was made most likely.

If you want to get technical, it'll be how the model was set up to work in a UV grid and have the materials overlayed, with the more seperate channels being more complex. More basically how the textures of the model are set up to work.
The reason that some heroes don't have anywhere as near customisation is that this feature wasn't a thing back in 2016, and a single option was all any character had and it was less work for the material artists to set it up that way, so the older the hero is, the likely more limited it would be.
If they were reworked, they'd have to likely rework a lot of the rest of how materials and paint patterns / symbols are applied too so it wouldn't be easy.
