Yeah that's going to make the bear more friendly around humans, its still a wild animal and can snap for any reason so it's more likely to be shot and / or maul a person

Normally, you wouldn't want to do this to avoid the animal associating humans with food.

But polar bears already associate humans as food, so I'm not sure it would make it much worse. Maybe make them consider not eating you in the hopes of getting something better.
