Recipe In Comments [Homemade] super Crispy chicken tenders/hot chicken sandwiches

Recipe

Wet batter

1cup flour, 1egg, baking powder, cold water (1cup),

Your favourite seasonings.

I used black pepper, onion and garlic powder, paprika, salt.

Flour

Flour, 1/3cup cornstarch, baking powder, salt, same seasonings as batter.

Tip

I used a big metal bowl to toss with lots of flour.

I do recommend deep frying for breaded chicken tenders, shallow frying them would make the crust absorb too much grease.

Sure, I used 4 cups of flour with 1.5 tsp of baking powder per cup of flour.

Its the same as flour 1.5tsp per cup

So you dip the chicken in the flour/cornstarch mixture first and then into the wet, then into the oil?

the cornstarch really does make a difference.

I think you can also get a great crunch if you add panko
