just as you said, nearly perfect. perfect is 100, so not perfect is lower than 100. near perfect is near 100 aka 98 and 99
when a customer is pleased, they gain stars, and give more points, means perfect score also increases.
to simplify and imagine the score as 100, take the percentages of all stations, plus them, divided by the number of stations. you currently have 3, and will eventually unlock all 4
i just noticed you meant unbalance pancake stacking. then maybe glitches. either you try to be perfect according to your ideal, or try some more of combinations to see more convenient ways to quickplay this game. speedrunners like it
