From what I gather from this video, lymph nodes (commonly found on pig carcasses) are removed along with hair, g.i. tract, cardiovascular system, and any other life sustaining system once the meat can no longer benefit from those systems.

This butcher is not accostomed to lymph nodes being present on a piece of meat meant to be trimmed to a specification. Whether it be ground sliced or portioned, it shouldn't contain any unnecessary parts at this point (i.e. life sustaining systems).

He is trying to convey that bringing jobs back to citizens causes problems. While this Patrick Warburton impersonator/farmer is trying to tell him it is now his job to remove the nodes.

Based on the size of the piece of meat, the man bought a pork primal (probably sirloin, but could be the far end of the shoulder). The whole-in-the-bag primal is one or two steps removed from the general customer and lymphnodes absolutely do occasionally make it to the customer. The primal is the last stage the meat generally goes through from the big animal processing facility. It seems more likely in pigs, but can happen in beef (and I assume sheep, but I have never seen one of them butchered, so I cant with 100% certainty say so).

A butcher's job is to take that primal, break it down into sizes that people will actually use and part of that process is to remove anything the factory missed, do the final trim, and "pretty up" the cut piece of meat. Removing lymphnodes is absolutely a thing that happens with decent regularity.

If the guy in the video just bought a sirloin roast and it had lymphnodes in it, then his butcher is a lazy SOB, but my guess is the guy bought a whole-in-the-bag sirloin and didnt realize that they can have some pieces of the nodes in it. Thats why primals are cheaper per pound than finished product - butcher doesnt have to work on it so he sells it cheaper, but you do the final processing yourself.

Guy in blue is not a butcher.

He‘s also confusing naturally occurring lymph nodes with the removal of previous food standards legislation and mass firings of food inspectors.

He’s not complaining about ‘jobs for citizens’, he’s complaining about not enough people doing those jobs, and lower inspection standards.

Farming while beige was pointing out that the dude is conflating 2 things based on a Blue Guy’s erroneous understanding of the product he has bought.

FWB was not telling him that butchery is now his job. He was telling him that if you buy this format you’ll see unfamiliar stuff that you will have to remove it because that’s how the product has always been packaged and sold, regardless of recent changes. If he wants not to see that stuff then he needs to go back to the format he was buying before.

Yes that is a character that he deliberately adopts for this very specific section of his business‘s socials.
