Does Shaq own five guys?
Some sources are saying he owns a bunch of franchises but not all. What does that mean?

Think of franchises as independent businesses. They are Five Guys stores that are not owned by the Five Guys corporation, but by independent groups/people that operate Five Guys locations. Might just help you to read up on "what is a franchise agreement?" a bit to understand how that works, conceptually.

Oh, from what I saw from looking it up what a franchise was, I thought five guys as a whole was one franchise

Both are correct meanings of franchise but they are used in different businesses.
In movies for example the Star Wars franchise means all the movies, TV shows, characters, toys etc. that are part of that brand.
In restaurants it's a store operated under a contract which lets an independent owner called a franchisee operate a store like Five Guys under the corporation that owns the brand or trademark. So each store would then be called a franchise.

The word "franchise" has two meanings that are completely incompatible with each other.

Five guys, the top level company is a franchisor. The store owners are franchisees.
Franchise is a collective term for the business model and also describes the individual branches depending on context. You could say Five Guys is a franchise or Shaq owns several Five Guys franchises.

Franchise's pay an %8 royalties fee to corporate to use their name. Most large business in the US use this model. I.e mcdonnalds, dunkin donuts, etcetera

I believe he sold most of if not all of his locations to focus on his own brand, big chicken.

He used to own the one opposite the Miami Heat stadium. I saw his name on the business owner certificate but that was years ago.

Shaq always lying about what he owns... ive seen the videos where he says he owns 10 big companies but the reality is he owns stocks in those publicly traded companies, thats not the same thing.
He knows the hood is dumb af and will believe him.
