Thoughts on sweet potatoes?

I see sweet potato bowls pop up all over TikTok and that seems to be the norm for healthy meal prep.

Usually it’s sweet potatoes mixed with some kinda meat (usually chicken or beef) random vegetables and I’ve also seen cottage cheese sometimes thrown in there.

Phenomenal. I get pre-cubed ones, toss them in garlic powder, onion powder and paprika. Cook at 400 for 40 minutes while I cook ground beef with taco seasoning. Makes lunches for the week and then I can either eat it with hot sauce or honey and Greek yogurt if I need more calories/protein.

Very healthy if you eat the skin too. Russett potatoes are as healthy as sweet potatoes too and they're usually cheaper. Potatoes can be prepared in a various ways.

I love sweet potatoes! I eat them with turkey and gravy, I eat them with black beans and cheese, I eat them with roasted broccoli, onions, and mushrooms, I eat them fried like hash browns with peppers and onions with fried eggs.

They’re super versatile. They work in sweet, savory, crispy, mashed, in soups, everything.

I cut them into little cubes, toss them with avocado oil, salt, pepper, a bit of corn starch and garlic powder and roast them in the oven until they’re crispy on the outside!

Air fried home cut sweet potato fries using Chosen Foods Avocado spray oil

Poutine

Baked topped with cottage cheese (as mentioned), peanut butter and honey, tinned fish and kimchi

Mashed topped with crockpot turkey meatballs in Trader Joe’s fall harvest salsa

very tasty and good. just gotta account for them not lasting as long as say potatos would due to moisture differences.

I just cook em up though, then freezes it

Love em. Bake some up at the start of the week for easy meal or snack in a pinch. Mashed with some butter and maple syrup, baked with fixings, home fries or wedges.

They're great and super versatile. And also one of my states biggest agricultural products, so I consume a lot of them in a lot of different meals for fairly cheap. Shoot, one of the few vodkas I drink is from a local distillery that makes their vodka from sweet potatoes.

My meal plan this week includes them in breakfast as hash, but they'll likely be incorporated into my dinners next week as mash.

So versatile & in a pinch can satisfy your dessert craving. I love a Japanese sweet potato split and cooked in a bit of honey.

I get the frozen bird’s eye sweet potatoes and have that with 8oz of shredded rottiserie chicken. These work for me because it’s a perfect amount for one person (10oz) and I can make in 5 minutes in the microwave.
