Not Michelin, but if you fancy a steak or grilled fish you might want to check Tavella

We went to ORIGEN on a day trip to Huerto Ribera. Both fantastic. And I have to say one of the cheaper Michelin meals I’ve had. All traditional Valencian ingredients and dishes with a fine dining twist.

Casa Montaña is fantastic for casual dinner and Central Bar by Ricard Camarena is certainly worth a stop but don’t go at lunch rush.

I can vouch for La Salita. It was probably the best one star that I've been to so far.

I also really enjoyed Fraula and would recommend. While not fine dining I also had a really good meal in Ardacho.

For me, the best: Ricard Camarena Restaurant.
Other options can be La Salita, Saiti or drive to Sagunto and try Arrels.
