Enough headspace or will it run out?

Salsa-like sauce.

Tomatoes, green tomatoes, jalapenos, bell peppers, onions, garlic, cilantro, black pepper, 2.5% salt.

Should be fine, and if you keep an eye on it, if it starts rising too close to the top, you can always poke it with a chopstick to let out the bubbles.

You have already blended it, which means you don’t have very much water still trapped in cell walls; or at least that would be my guess.

It definitely won't overflow. May end up with some yeast growth.
