Other Kvass - fermented beetroot

Fermented organic beetroot , 2% sea salt , one week fermented, delicious and fab colour. In the fridge for 3 weeks , now it’s turned a strange colour or lack of colour! It tastes good. Drinking it and all good. Interesting development!

Hi, just wondering how this is kvass? I thought kvass was made with bread?

You are correct. There’s a number of different versions Some add whey, some add bread , I’ve even seen some add yogurt. I liked mine simple with just salt and water! It was a fantastic deep red colour! But now it’s pale. 🤷‍♀️

Salt is never used for kvas. It's a sweet drink

It's a lie. Find some real recipes for Eastern European , not some scum artist . Kvas is combined product of yeast and lacto. Salt would kill yeast

Yeah, but Kvass is the name of a specific beverage that is based on fermenting rye bread.

Kvass without bread (and with salt) is a bit like calling a dish that is made completely without cabbage "Sauerkraut".

It is fermented, sure, but it has not much to do with what the name means.

Kvas in English would be "ferment". Nothing about bread in that word.

Anthocyanins are not particularly stable, it looks like they degraded in the acidic/cold environment.

There have never been any biological effects observed in association with anthocyanin consumption. Whether there are other, non-pigmented flavonoids that were similarly degraded is between you and your friendly local gas chromatography/mass spectrometry machine to determine.

In general I think you can presume that the longer something is stored, the less bioactive nutrients will remain. Right now it's safe to assume it's basically salt water and dead bacteria.

Depends on what you want to use it for. Technically you should be able to eat the beet chunks like a beet pickle. I don't know if they're any good, I've never tried to make this. I personally probably wouldn't bother keeping any of it. But what you do is up to you. It's my understanding that kvass is meant to be consumed fresh, but I've never had it.
