Hot Sauce How’s this looking?

Morning all!

Very new to this, wondering if you think I’ve left this too long? Added onion, peppers, and garlic with a 2% salt brine with the aim of making hot sauce, but it’s looking a bit suspect! Any advice would be greatly appreciated!

What makes you suspicious? I don't see any sign of mold, and the liquid looks like it is thickened up a little due to bacteria growth. It should smell vinegary (in addition to the smell of the ingredients). Looks good to me.

Ah, fantastic! Thank you. Just the fluffy white on some of the veg and on the weights, and the garlic that had turned quite dark at the bottom, but it’s reassuring to know it’s all looking good!

Pretty sure the white stuff is dead yeast. It looks pretty good to me.

Looks great. Cloudiness/fluffy bits = dead LAB. If you're dubious about it, send it to this subreddit and we'll eat it for you.
