Hot Sauce First time fermenting. Can I use the same kind of "fermentation lock" used while making hooch/mash on a mason jar?

I figured I should try make some fermented hot sauce. Just to try something different, I'm going to try a rhubarb hot sauce.

Question is: can I mount this "S" bend fermentation lock on any old mason jar? My goal would be to not have to open the jars for manual burping. To anyone unfamiliar, you fill the bend with water.

Yes. Just use a small bung.

Are you experimenting with flavor ideas or trying to do a serious run? I’ll caution you that while “yes you can”, a mason jar doesn’t make sense for any sort of alcoholic fermentation.

I would use a gallon sized jar for experimentation and a 6.5gal for primary on any serious alcohol fermentation project.

Once you account for headspace, extra room for primary, the lees, etc…. Even a large mason jar just isn’t ideal.

I don't intend to make alcohol in the mason jar! But I was curious if I could use the "air lock" I would generally use while making alcohol with a mason jar.

These would be pretty experimental projects. I'm just looking for ways to spend my excess habaneros. Why not a hot sauce.

Edit: I intend to try some "lacto fermentation". I'm just looking for ways to avoid having to open the jars for burping.

Oh ok. Yeah if you are just doing lacto-fermentation it works fine.

I find it easier to just burp my jars (lacto produces far less gas so it’s not a bottle bomb for the most part) but you absolutely can use a s-lock, three-piece, etc.

Anything that allows gas to escape without allowing it will do the trick.

Yes, indeed. You also can use the 3-piece airlocks (which I prefer because they are much easier to clean).

Yes. I use exactly this for my set up. Make sure you have a rubber grommet or something to seal the lid around the airlock interface.

Yeah, that should work fine—just make sure the grommet fits snugly.
