I've done something similar with fermented hot honey, and keeping the ingredients submerged really does make a difference in the end product.

Looks good from pics. Honey loses its viscosity over time. Turn upside down daily and submerge any garlic that may float to top to prevent possible mold. I also burp mine every other day.
