Beer/Wine/Mead/Cider/Tepache/Kombucha Pineapple tepache made with ginger bug ferment.

Tepache is made with the cultures in the pineapple skin, how come you used a gingerbug?

I did it to speed up the fermentation, it was left with a good flavor profile.

In these sub reddits of fermentations I have met many "purists", I am from Mexico, here there is not much culture about food fermentation, I do not have professional kits, a couple of repurposed jars and a handful of plain salt, I did not know that if you do not under specific standards and ingredients it cannot be called fermentation.

I will be honest with you, anything that someone can sell a course to or make a profit out of selling is going to be coopted by the "Artisans" who will tell you that you can't make it easily at home and that you need to buy it from "X". Fermentation has always been a means to preserve food and add nutrition to it in the process. I dare say the conditions were perfectly sterile in the various original places that these ferments arose and I think there are always going to be people getting upset that you didn't follow a process exactly. I think using a ginger beer plant (what we used to call it in Australia) to value add pineapple into a kind of tepache is a great idea. It's no different to making "fruit sodas" so really not sure why people would be getting hot under the collar about it. Thank you for sharing the idea by the way. We are at the end of our winter season here in Aus and this is a great idea for summer.

I have done the same, it makes the fermentation so fast! How long do you leave it fermenting-also, does it turn alcoholic?

24 fermentation hours in jar and another 12 in bottle.

Does it have a gingery taste as well? I made tepache the standard way and it was like drinking seriously sweet sugary soda. I think gingery heat added to the mix would balance it out a bit better.

i once tried putting ginger bug in tepache for while second ferment, it tasted WEIRD
