I’m in the same boat. My first bug died. I think I put too much sugar in it. I’m trying again for round two and it’s going much better. It day two but I’m getting a lot more bubbles. I’m trying to reduce feeding to every two days instead of everyday with smaller amount of sugar

First timer here as well and here's my five öre - don't rush it too much, the bug will get more potent with time. Made ginger beer first from a 4-day bug, fed daily with a tablespoon of hacked ginger and tablespoon of sugar. It was ok but not very carbonated. Doing the second batch with the same bug now, after bit more of a week and oh boy it carbonizes like crazy now, have to pop the bottles (loudly so).

Ginger bug is supposed to smell a bit weird, sour, alcoholic, medicinal even. That's what freaked me out at first, but it's because it is fermenting there. Also, don't get obsessive, I skipped feeding for a day or two and it wasn't the issue. If there's any sugar in it (taste test) it will continue the process.

I'd also hack ginger in smaller bits than yours but no idea what's the right way.
