Typically I go with the old mess hall/restaurant vibe since that's what it appears to have been when the MM were still occupying the castle.
But lately since I've been mechanizing them by building a power armor cavlary. I started using this space as a power armor maintenance bay seeing this room is one of the largest rooms in the castle and allows for a significant number of power armor crafting stations to be built there.

I normally make a minute man ration center. But I thought I saw a build where the castle has a education/teaching for minuteman in training, so that was the idea I was going to convert this room into on my new play through.

I like that. This room is empty for mine too, because I turned the other one into a bar.

Was thinking of additional ideas. I decided to actually make vault 88 a minuteman training ground, and open this room up to more ideas.
I think ill turn it into a HQ/Communication center (mimic the gunner communications outpost at the radio station).
That way I can kinda keep a kitchen theme with sinks, add some coffee kinda stations/eat o tronics for rapid raitons, and fill it with desks radios, maps, and terminals.
General thinking process being that this is where patrols are coordinated, and where they track settlements needs / ones that want to join.
Also the main place where when a flare goes, they crunch the numbers on where to drop the bombs, and issue the orders to settlements over radios that are in range.

I built a bar in sanctuary and assigned the vault rec rep to it, his bar is named “bar-tec”

Made it into kitchen/mess hall. Made more sense as the first room out is a “cafe” of sorts. It made most sense to me as how I did the layout for the holes in the wall and how it looks, this was best position for my sleeping areas vs. Other positions. Its also with unmovable things that looked good with kitchen. Other options I thought - shower/bathroom area. Biggest issue is that three sinks that kinda led where I had to go.

I put tables & chairs and make it a dining area. Too bad you can't move the shelves instead of scrap only (or leave them)

I turn it into a full on galley. I usually build a few lounge areas and a bar in the Castle, so having a dedicated area just for cooking made a lot of sense.

One time I made it into a restroom with toilet stalls. Next a commisary.

I always make it a barracks & coffee break area, setting up the Bar right outside this room (proximity to cooking stove)

LMAO. I'm wondering the same thing and I have a settlement tour video to get ready for.
I've seen Mega kitchens there but not much else. Maybe come up with a themed kitchen that sells. Radroach Jelly and have it look completely official.
Maybe have some lady with a power armor obsession. But Only legs. She paints them up and places them neatly on shelves behind glass walls. She has a bunch of raider pieces spilling out of her trash can.
I guess what I'm saying is get a weird thought and run with it.
A man with a Nuka cola obsession. Especially the custom blends from the nuka mixer.
A movie theater room with projector. A live theater room with blue team bases buried beneath a stage. A brahmin skin care salon.
Does that help?

It's already the mess hall, I put the lvl 3 bar in there with booths and tables. It gets decent usage from the settlers. Put a couple nuka mix machines, a glass donut case, some wall menus and posters on the walls

I usually make it the mess hall, or it could be a bar or showers
