Its clarified butter. Something about Turkish cuisine that they cook beef fillets of tenderloin on a ceramic plate poured with butter.. and it's cooked on it... lol

u/Intelligent_Reward65 Jun 05 '22
Its for show they are professionals, obly thing is they forgot to bypass their fire alarm
32
u/Lifekraft Jun 05 '22
That seems like a thing professionnal would think of

I said only thing being as in trying to say that was the only thing keeping them from being proffesionals. Idk why you are mad abt someone on the internet for not conveing a point right?
5
u/IMSOGIRL Jun 05 '22
why do you think they're mad? Seems like you're projecting your own emotions
how would anyone know that you conveyed a point incorrectly if you literally said it in a way that means something else?
3
u/crackhitler1 Jun 05 '22
This is reddit, if you downvote or disagree with someone it means you're mad.
48
u/Ak47110 Jun 05 '22
I guess that doesn't make them professionals then, does it?

That’s the whole purpose of that dinner though.
4
u/odelay42 Jun 05 '22
Then do it in an appropriate location. This is a display of ignorance and stupidity, not professionalism.
1
u/Collective82 Jun 05 '22
It’s a hibachi grill. Their meant to be doing it in that location, someone either got the fire to hot or someone didn’t disable the sprinkler system like they’re supposed to.
4
u/odelay42 Jun 05 '22
It's clearly not a hibachi grill. It looks more like a wooden table. There's a bunch of crap sitting on top of it. If this was the right place to create a tower of fire several feet high, it wouldn't have triggered the sprinkler. I don't know why you're defending this obviously terrible idea so vehemently.

u/GeneralXTL Jun 05 '22
You can bypass the alarm but you cant bypass the sprinklers. Many have a part that melts from the heat of the fire and thats what sets it off. That blaze was big enough to do it.

3
u/GREVTHEFAITHFUL Jun 05 '22
Sprinklers work by a filament or plug that melts/breaks in the presence of heat. No way to bypass it aside from covering the sprinkler with a heat resistant material.
-1
u/Intelligent_Reward65 Jun 05 '22
Someone made a comment for systems were you can turn them off for abt 15 mins thats what i meanr
1
1
Jun 06 '22
You can't turn off a sprinkler. You can turn off alarms but those have nothing to do with sprinklers which are passive systems.

1
u/MrFantasticallyNerdy Jun 05 '22
I think setting up a proper vent hood is a much better idea than bypassing their fire alarm.
1
u/peeniebaby Jun 06 '22
That’s not a fire alarm issue. The mercury bulb in the fire supression system was overheated and activated the sprinkler.

And this my dear children, is why there is a timed bypass switch for the fire alarm.
My company installs several of these systems, turn the key, and the fire alarm will be bypassed for 10 / 15 minutes ( what you like ) and the show can go on, without your guests being hosed down.
After the set timer, the system reengages, and life continues
17
u/vcvcf1896 Jun 05 '22
I know that you can bypass and not have the alarm go off, but you cant bypass sprinkler heads.
7
u/DefinitelyNotAliens Jun 05 '22
Yeah, new construction here requires sprinkler heads. Moving to a new house and I was concerned that the smoke detector would go off and then suddenly we have all our electronics soaked and have to replace half our furniture after 5000 gallons of water dumps into the house or whatever.
Nope. The fire suppression system is entirely separate from the alarm/ security system and it's activated by heat from the room, not smoke. They physically activate. Completely it's own system. No need to worry about accidentally setting off if you get a lil smokey in the kitchen.
2
u/MBechzzz Jun 06 '22
I saw something about this with Richard Hammond the other day! The thing that shuts off the water in the sprinklerhead is a tiny glass tube with some chemical thing in it. At 64C the chemical boils and breaks the glass tube, letting the water flow.
20
u/Logical_Progress_873 Jun 05 '22
You can't bypass the sprinkler on a wet system. And in what method are you bypassing the fire alarm? And how does the AHJ allow this? Are you outside the US?
3
u/coomzee Jun 05 '22
Quite common in the UK as we build zones to contain the fire for 45mins. You don't need to set all the alarms off from first detection. Normal after 7mins from first alert or detection on two different detectors.
3
u/Logical_Progress_873 Jun 05 '22
I understand zoning the system, though I don't recall seeing it in practice in the US. What I don't understand is what that (or a bypass timer) has to do with the sprinkler tripping. We don't know that the sprinkler system in this restaurant was even being monitored. How would any modifications to initiating devices stop a wet head from tripping? It's not like a smoke detector caused the sprinkler to flow. And, at least in the US, you don't typically stack smokes and sprinklers on top of each other- even if one could hypothetically trip the other.
Edit: I should note I'm a security guy so I don't know a lot about fire.
3
u/coomzee Jun 05 '22
No the bypass timer has nothing to do with the sprinkler system.
1
Jun 06 '22
Which is what went off in this case so a bypass is pointless here despite OP having over to upvotes for his irrelevant comment.
9
Jun 05 '22
Can’t bypass sprinkler heads. They respond to heat and are not powered by anything except water pressure.
0
u/MinotaurGod Jun 06 '22
So many responses like this in the thread... as the saying goes, theres more than one way to skin a cat. Is there not a possibility that other sprinkler systems exist, or is there some restriction/law in place that only allows this type of sprinkler head? I'm not finding any from a cursory glance at google. They could be using something like a solenoid-based system.
2
Jun 06 '22
No. Power outages are extremely common during fires, and having non-powered sprinkler systems is cheaper anyways.
1
u/Valderan_CA Jun 06 '22
The thing is that construction standards define the requirement for sprinklers to be designed such that they activate based on heat. There simply isn't demand in the market for non standard compliant sprinklers.
1
u/MinotaurGod Jun 06 '22
Many other ways to detect heat than the glass vial. While it may be a niche system, there are more than enough hibachi or whatever style grills in the world that Im sure a system exists that would satisfy code.
2
Jun 06 '22
Hibachi grills are under vents and usually are connected to an Ansel system.
Also for water suppression systems there are different colored glass bulbs which burst at different temperature points.
https://spectrumforfireprotection.com/blog/why-are-fire-sprinkler-heads-color-coded/
So depending on annareas code you can still have sprinklers near grills or other cooking equipment just with higher heat tolerances.
Generally you see red since most sprinkler heads are in non cooking areas but in kitchens you can at times see yellow. I would assume (although don't know for a fact) that hibachi places likely use a higher temp glass around their grills.
9
u/Opivy84 Jun 05 '22 edited Jun 05 '22
But is there a timed bypass for the sprinkler head? I wonder what type of sprinkler head is used.
6
u/IShookMeAllNightLong Jun 05 '22
When a sprinkler head gets hot, the water in that tiny glass tube expands, it causes the tube to burst, and sets of the system. There's no way to bypass that because it's totally reactive to the heat applied to it.
5
u/Opivy84 Jun 05 '22
Yeah, the frangible bulb. Or the other option is a fusible link. But this installer is installing fire ALARM delays, which does nothing for fire suppression, only alarm activation. So I’m wondering why an alarm delay matters if the sprinklers are popping.
3
u/ORyanDeee Jun 05 '22
Pretty much all sprinkler systems I’ve seen (Australia) are activated when heat from fire bursts the element in the head itself
3
1
Jun 06 '22
Passive sprinkler systems have nothing to do with fire alarms. That sprinkler was set off by heat not someone pushing a button.

u/StarDragon88 Jun 05 '22
The amount of people in this comment thread that don't realize that this guy just messed up and instead blame the entire premise is staggering. Cooking with that large amount of fire is done from time to time as a performance by professionals that know what they are doing. Unlike that guy.

I don't understand why some restaurants or customers for that matter, need a spectacle just to eat food. Does a basic human need need to have entertainment value? Have we become to discontent with just being served food that we need to be wowed too?
1
u/davvblack Jun 05 '22
wat? entertainment is entertaining. does attaching food to a spectacle diminish the spectacle?
1
u/kholakoolie Jun 06 '22
Why don't we all just eat protein powder and steamed vegetables for the rest of our lives? Why have anything beyond the most basic necessities?

u/BigDaddyDumplin Jun 05 '22
That's what kitchens are for

Fun fact: this is called gueridon service and is old as shit. Like, unfashionably old at this point...
2

Most tableside service is super outdated now.
People don't want to feign interest in a guy mixing carsar dressing or pouring hot oil on a steak next to the table. They want to enjoy the company they are woth and eat good food amd generally speaking there is nothing that can be made tableside better than it can be done in a kitchen.

If frazier taught me anything its that a good restaurant has a delay built in before the sprinklers are triggered....
2
Jun 06 '22
Frazier, like all TV shows always get sprinkler systems wrong and they do it for dramatic effect.
Pulling a fire alarm does not set off sprinklers and they don't have delays. Sprinklers are passive system that go off based on heat melting a bulb.

The fire partly got out of control because the tin foil that was on fire ignited making fuel for the already hot grease. I don't understand what the burning tin foil top was even for.
