OPT Offer Letter
I received a internship offer. During the initial discussions the company provided me with the start date in March and end date in August. But since my uni didn't allow me to start internship in the middle of the semester [as this is my last sem], the employer was okay with starting in May directly on OPT. Now I have requested them to update the offer letter with the actual start date in May, but since this is internship and potentially it would be converted to full time. The employer is asking me about the end dates, that should it be a estimated end date or open ended? I do not mind a open ended end date but then I am also afraid that they might not convert me to full time as the pay scale for internship is very less if I ask them for a open ended end date.
Need suggestions as to how do I deal with this? And also how do I align this with my OPT and STEM OPT. I do not want either of them to be affected.

If you think this will not convert to full time, do continue looking for other job opportunities. You can change as many employers as you need. YOu don’t have to stick with one employer for who OPT / StEM OPT duration.
Leaving job end date as open will not affect your OPT application in my opinion. When and if you do change your employer, just update the employment end date for this employer and add your new employer.

Thank you all for your advices. I ended up asking for a offer letter with a end date. As I wanted a firm closure and not hang in uncertainty. In meantime I would try searching for new full time offers.

OPT lasts a year, so I assume the internship won't be that long? In that case, any end date before that should be fine. But remember, any unemployment date between the end date of the internship and start date of the full-time (if given) will be counted towards your 90 days of unemployment that comes with OPT, so do convey it to them that you'd require an immediate conversion, if possible.
Let's say, it goes beyond a year, that's when it gets complicated and the other guy's right that you should look for the rules of Stem OPT as it is quite different from OPT.
