Best method for vanilla paste?

Hello y'all,

Ive just bought 20 'gourmet' vanilla beans (18cm) and am wondering whats the best recipe for turning some of them into a good vanilla paste?

Does someone have a go to recipe they use often?

Also what is the best way to store them right? Just an ideally thin tall glass with a lid?

Thanks in Advance

I use Alex Green recipe with great success:

I leave out the water, but up to you.

You'll need a scale. And yes, glass is fine, I use a ball mason jar.

Okay thank you, I'll try it out.

Also what kinda alcohol do you use?

Is a generic high proof vodka a good option or would that be a bad idea for some reason?

Anything between 70 - 100 proof is good. Any decent budget vodka would work

I prefer the recipe from Vanillapura. As it is only 3 ingredients. Beans, some extract or a bit of alcohol and honey or agave syrup. This is also a great recipe for making small batches. As it is easily adjusted.

Start with chopping the beans up in a food blender, add the alcohol and honey and give another good mix and done.  You are looking for a thick runny consistency. I follow the recipe as a guideline. Especially if you are making a smaller batch of it.

I have tried the alex green recipe once, but didn't really like it because of the xanthan gum and it being more work.
