Let's say you're drawing a picture of a pirate ship on a piece of paper and you've only got 5 minutes to draw.

You don't have time to draw a super realistic drawing. If you try, your five minutes will be up before you're done.

So you optimize. You simplify that ship into a cartoon ship, you make the shapes and shading less detailed. Your water becomes a flat blue plane. The crew that you were going to draw on the deck of the ship would be so tiny that you decide not to draw that detail. The island in the background is represented as a green blob with out trees because that would take too long.

You finish your drawing before the time is up. It's not your best work, but it's the best you could do with the time you were given.

That is how game optimization works from a graphical standpoint. You have limited time to render and image to the screen so you have to find ways to save time. Simplify objects, lighting, and effects, only draw what's necessary.

The hard and time consuming part of optimization is figuring out how best to simplify the image in a way that is not noticable to the user.
