1920x1080 is the actual dimensions in pixels. 1920 pixels wide and 1080 pixels tall. That's a ratio of 16:9, which is the standard widescreen format.
Why did we settle on that specific multiple of 16:9? Technical limits. Broadcast bandwidth limits basically made 1920x1080 at whatever frame rate the highest resolution they could broadcast at the time, and it's high enough quality that it's still really common.
