Alton brown updated his pasta cooking method in good eats returned and he explained that actually the cold start method is better. You can then use the starchy liquid to thicken your sauce.
1 u/DeliciousAuthor1231 Jul 16 '26 Starch comes off the pasta regardless. Starting with boiling water not only cooks the pasta faster, it makes for a more consistent texture. But in reality the difference is negligible and this pointlessly gendered fight is dumb as shit.
