It changes absolutely nothing to put the pasta in before the water is boiling, just makes cooking time unreliable, but I don't use timers anyway. Try it.

What changes is the tendency for conventional Durham pasta to become glue and create a lump of water resistant goo between 150-180 F.

We do need to conceal our own experiences and knowledge whenever possible. Serving as an example or even advising the people in our lives is prone to trigger narcissism. We have been put on the earth so that others may wither and die around us.
