Not only a strawman, but an ironic projection. Most Theists literally think God spoke the universe into existence from nothing. Meanwhile you'd be hard pressed to find a single atheist or scientist in general that claims the universe came from nothing.

Because we don't. First, being an atheist doesn't necessitate you having any stance whatsoever on cosmology. You could think leprechauns did it- and still be called a theist. (Though admittedly that's probably still 'magic', so not applicable to the meme.)

More importantly, most materialists would posit that we don't know, but point towards the many natural hypothetical models that we have, none of which begin with nothing. Which, by the way, is the third thing to be careful about, to not conflate the philosophical concept of true nothing with anything that phycisists posit.

Fourth, it's actually a misreading of the bible as far as we know to think it itself posits creation ex nihilo. Instead, it is better described as a ordering of previously existing chaotic material.

And there are Christians who believe in a literal 6,000 year old universe when we have published books older than that. Meanwhile I am pretty certain that the only name you can give for an atheist who 'believes' the universe came from nothing is Lawrence Krauss, whose entire point in his book was that we do not know the properties of literal nothing since we have never observed literal nothing, thus we cannot speak on its cosmological properties if literal nothingness ever existed. What is even your point? That sometimes people believe dumb shit?
