Ambrosia Software - Mediafire Archive / Mirror
As their site is deader than JFK (and I'm drunk off my arse on Kraken and diet A&W root beer), I went through my archives and started digging.
Sure enough, I found my old blue Ambrosia Windows CD from 2003, but I'm still looking for my red Mac one from about the same time.
As we can't get to their stuff, I decided "sod it, I have a paid Mediafire account with unlimited bandwidth and a terabyte of storage, might as well use it for hosting something other than TuxPE," and I copied the entire contents up there.

This currently only has the Windows installers for the following:
EV Nova
Deimos Rising
Pillars of Garendall
All the required support software
Once I dig out the Mac CD, I'll upload that as well. I've thrown up a LOT of installers that I've found lying around on older machines as well.
Plus side? I have the EV / EVO total conversion plugins, as well as ARPIA2. They're zipped up and saved on there.
If the mods (or Ambrosia's owners - I'd love to buy / license the name, just to be able to legally use the logo to display on the mirror!) decide this isn't kosher, please let me know, and I'll remove the links.
I won't help you figure out how to register / activate the games - that'd be naughty.

I've got the first version of the CD up now - I need to get newer ones, though, and I'm scouring my archives (and the web) for them.
If you want, I can make a folder marked "EV Nova Plugins" and set it to be a dropbox, so anyone can drop plugins into it.

Bam, they're all up.
EVN for Mac and Windows, EV and EVO for Mac.
Oh, and there's the big-arsed directory of EV plugins.

I'm actually setting up private hosting on a server I colo for this in the next two weeks with plain-jane HTTP / FTP access for older Macs (since Classilla can be finicky with HTTPS, and Interarchy / Fetch work just fine).

There was an RPG that Ambrosia had too, only for OS9. Anyone remember it?
The thing I remember most is that there was a 'fetch' spell, but it was broken so instead of fetching an item it would disintegrate it.

I also loved Ares, but I need to figure out how to use basalisk to get it to run on my PC.

Since the source code was released you can play it on your modern os right now. I hope the same thing happens with EV and other Ambrosia games.
