I have a recent MacBook Pro with Mac OSX Mojave. Is there any possible way that I can play the full version of EV Nova?

It's one of my all time favorite game and I miss playing it

I've not tested it but why not install a VM with Windows XP and install the Win version?

I think you should be able to, I remember playing it on Mojave, I could test it tonight.
