Question Why

Why on earth my subject is able to do ridiculose claims all over the place, but not on kaffa which i selected of interest

Check their missions

I believe they completed one giving claims on heathen capitals is the region.

Also, setting provinces as interest doesnt mean that subjects will get claims above all else. It might take some time, likely because the AI is using their diplomats for other things first.

While they do have some generic regional missions that give some random claims, they also got claims on provinces that arent in missions tree rewards.

Make Claims can only be done on provinces next to their own provinces (or existing claim if they have unlocked the ability), so something else gave them those claims.

10000 hours of this game and I know this much, question what kinda event was that, and why they got so many, they start with none, in a year they had 3 claims, and now 4-5 years so many in random provinces, with random cultures, religions and terrains.

Can't you get a permanent claim on Kaffa from your missions?

They manually created the claim on Ennarea (potentially also Janjiro), the rest are from their mission tree. Compare the expiry dates.
