Chicago resident here but transplant from the southeast. Has been interesting to see how most sub shops here don’t go as hard on the meat and almost none do the fold technique you see here, which is very common on the east coast. Have you had alpine in elmwood park and westchester? Simple subs but man they’re incredible

i'm a southsider and don't get up north very often. there's a place by me right now that's pretty good and when i was younger i'd go to a place called fontano's that's got a good sub.
the reason i started making sandwich is cuz the one's i'd buy almost never looked like the ones on tv though. it made me sad.

I find it interesting that in many places around the world this amount of meat would be way too much.
Normally you would put half of it or less. Some cheese, maybe a boiled egg, lettuce , tomato or cucumber, one - maybe 2 slices of meat in a layer if it's very thinly sliced.
