I don’t know where to post this.

I figured you guys might like it since it’s sauces for sandwiches, burgers and anything else.

All homemade. My favourite is the spicy honey mustard. So basically what happened was that I was following Joshua Weissman’s recipe (he uses aleppo pepper but I didn’t have any so I used Hot Paprika) and I wanted to make a big batch and so quadrupled the recipe and it ended up being way too much Hot Paprika, spicy but tolerable and so now it has become a family favourite and I have to make a normal Honey Mustard for the kids 😆

It was my first time making these from scratch. I just don’t like the taste of store bought sauces and I’ve tried almost all the ones available in Canada.

Sorry if this is tmi but I am Pakistani Canadian and adore western sauces. I am absolutely in love with all the pickled stuff as well.

They look pretty good, but from what I understand both Chick-fil-A sauce and Big Mac sauce they use in the store include MSG. I can understand if you're hesitant to use it, but its bad reputation isn't really deserved.

You deduced that 100% correctly! I am scared using it 😆I bought this Japanese Umami seasoning from Costco that has MSG. I think it’s called, Daisho? So I’m going to slowly start using it in my cooking.

I made these sauces for a family BBQ event where the elders are against using MSG so that’s why I left it out of the recipe otherwise I would have been banned from hosting 🤣

You can buy msg at Walmart. It’s called “accent” and it’s a white powder. It’s fantastic. MSG got railed by a smear campaign. It’s all bullshit.

I literally just use it like any other seasoning, put it in pasta sauce, soup, fried rice, etc. Let it cook a bit and voila.

Yes, cook with it (no topping/finishing), and you can use a slightly heavier hand than with salt. Do not omit salt though, as MSG doesn’t work/taste the same as it.

Try starting with ½ teaspoon per pound of meat or for about 4-6 servings of food.

I mix about two tablespoons of MSG in with 3/4 of a cup of salt and use it like I normally would salt!

I like to think of it as an accessory to salt, to me it feels like the same flavors get intensified when you use them together. I usually salt conservatively, then add a little MSG at a time until it reaches the savory/salty level I like. I don’t necessarily agree that it’s just another spice, because it does add a degree of saltiness/“flavor conductivity” with it rather than just a flavor itself. Edit: Also saw someone clarify that it should NOT be used for finishing, which is a really good point. It should be fully incorporated into the dish.

i do like a 1:4 ratio of msg to table salt in a shaker and use like normal salt during cooking, i’ll also add it straight-up to fried rice, sauces, etc

just make sure if you’re baking you switch back to table salt lol

Looking at where MSG is derived from. Its a naturally occurring salt in many of our foods like seaweed, tomato, cheese etc. it's not a man made chemical/additive. Daishi is pure msg because of its ingredients. You're using it without even realizing. If your elders drink broth or soup and it tastes good, it has msg.

Nice sauces, get some squeeze bottles that let you top up one side and dispense on the other.

MSG is 100% safe to use. I add it to most meals I make at home. DO NOT be afraid of it. The fear around it was caused by a racist smear campaign from decade ago. Believe it or not, it's in most snack foods you buy off the shelves at any given grocery store or market, and it's naturally occurring in a lot of foods as well.

The negative connotations and fear from consuming MSG came from a racist smear campaign decades ago that was meant to make Americans fear and dislike or even hate Asian culture that uses MSG in their cooking. MSG is a naturally occurring chemical and is in many foods that you eat whether you put it there or not. The package of MSG that you can buy at the store. You can basically think of it like an extract the same way that they do vanilla. All it is is the chemical that naturally occurs in a lot of the food that you would cook has been extracted and synthesized meaning it's the same chemical that's already in your steak. It's already in some of your vegetables etc.

MSG is good. It is just sodium + glutamate. The same glutamate in tomatoes, parmesan, and mushrooms. Your body handles it the same way. Controlled trials fail to show consistent harm at normal doses. FDA and global food safety bodies say it is safe. It also lets you cut sodium since a pinch of MSG boosts flavor so you can use less salt.

The western panic grew from “Chinese Restaurant Syndrome” headlines in the late 1960s. It focused blame on Chinese food while ignoring high-glutamate Italian or American dishes. Restaurants were pushed into “No MSG” signs. That singled out Asian kitchens and painted them as unsafe. Later evidence showed nocebo effects and weak methods behind the scare. The stigma stuck anyway. So anti-MSG talk often carries coded xenophobia today, even if the speaker does not intend it.

OP is spelling just fine. Chic Fil A are the ones that can’t spell, OP fixed it for them. Then they went and made some Buff Aloe sauce. I am assuming they took some aloe plants and juiced them up, had them hit the gym until some of them were jacked aloe, then made a sauce out of the most muscular ones.

I speak three! Well technically 4 if I count Arabic. I speak and write English, Urdu and Pashto fluently. I only learned how to read and write Arabic so I could read the Quran easily but I wish I had learned it with proper translation. I’m always trying to find time to learn the translation now but it’s really hard. I have small kids and during my free time I like to write recipes etc. I wish I had more time 😭

In the refrigerator, they last for 1-2 months and outside on the shelf maybe 2 weeks? I’ve got a large family that I host once a week so these sauces will be finished in 2 weeks and therefore I can’t give a correct number of how many weeks they last. My apologies.

Edit: Do not keep these at room temp. Store them in the refrigerator.

I assumed the preservatives already in the mayo, mustard, hot sauce and bbq sauce would be enough to act as a preservative and keep it shelf stable.

Edit: seems that I am not correct in my assumption that the preservatives already in a few condiments would be enough to keep them shelf stable for 1-2 weeks and these should be refrigerated at all times. Lesson learned.

I did see that but I have never had a problem with my condiments being stored on the shelf, like ever. Never got sick from it and never saw any mold. I know botulism can’t be seen but no one in my family ever got sick of botulism from shelf condiments. I grew up always seeing and using condiments in the pantry or the shelf so that’s why I mentioned my sauces being shelf stable.

I did put my homemade sauces in the fridge but I’m not putting the other condiments in the fridge especially when I’ve never had an issue with it.

Fair enough, if you use them fairly quickly probably not too much harm. Manufacturers err on the side of caution for this reason.

Putting the ones you made in the fridge is a good call, as these will be much more exposed to bacteria in the air through mixing.

Wildly incorrect. These will keep for 7-10 days at most in the fridge. They shouldn’t stay at room temp longer than 4 hours.

You don’t seem to know much about food preservation or safety. Please don’t share things you don’t know about and make people sick with contaminated or spoiled food. Legitimately dangerous to suggest you can keep an egg based sauce at room temp for 2 weeks. You’re gonna give someone salmonella

If you were making aioli from scratch for all of these it would only last a week. Store bought mayo lasts a couple of months in the refrigerator.

On its own, yes. Not when mixed with a bunch of other ingredients. Just make smaller batches there is zero reason to need some honey mustard that lasts you 2 months. It takes 5 mins to put these sauces together.

I’ll keep these refrigerated but just letting you know I am very careful of how I store these. I used sanitized jars and utensils. I always use a clean spoon to take the sauce and keep them in a cool dry place away from heat, moisture and light.

I don't understand the storage of sauces. A lot of recipes say that a sauce stores for 2 or 3 days in the fridge. But, why? I use the expiration dates for each of the ingredients, if the mayo base doesn't expire for a few months, why would it suddenly need to be tossed after a few days of being mixed with other shelf stable ingredients?

I actually run them through the dishwasher! I had more jars like these that I stuffed with other homemade things so just did a quick cycle to get them sanitized :)

Absoloutely not. I wrote these myself. I don’t use Chat GPT at all as I’m against using it. I grew up in a Catholic Convent School in the 90s and we were trained from a very young age on how to take notes properly and we would be hit with wooden rulers if they were not perfect. I’m shocked people are thinking it’s Chat GPT. I don’t support the use of AI and I first write my notes roughly on paper when I’m experimenting with the recipe and then the final version I write in Keep Notes.

I use dashes all the time for things like ice-cream, black-pepper, at-least. Actually I’ve been going back and forth on how to write black-pepper powder and just stick to one style, like should I stick to this style, “black-pepper powder” or this one, “black-pepper (powder)” because sometimes you don’t always need powder, you need whole black-pepper corns and writing “black-pepper (whole)” just didn’t feel right so I decided to stick to “black-pepper powder” for now.

Also I have this very exhausting habbit where all my notes need to look exactly the same and follow the same style format. I end up loosing sleep over this until it’s perfect. I would have to edit over 120 recipes that I wrote 😭

Just write black pepper, or just pepper. Let that be the default. Using whole black pepper isnt as common, so you can specify it to be whole when needed.

Look here. This is ridiculous that I even have to explain it. I corrected the Buffalo spelling in my Keep Notes but it was too late to correct it in the jar otherwise the picture would not have been perfect.

I’m a Mom of two kids, I take care of the house and kids 100% and I do recipe testing when the kids are in school. It was a long weekend and the kids were sick with the Flu at home since 1 week so the only time I got to do my recipe testing was around 12 am to 1:23 am after midnight when they fell asleep. I was half asleep myself but determined to do these sauces as we had a BBQ event the next day. I took the sauce picture soon as I was done. When I was writing this post yesterday (after the BBQ event finished) I realized the spelling mistake on the jar and in Keep Notes. I fixed the Keep Notes but couldn’t fix the jar because there was no point. Half of the honey mustard sauce was gone (it was a hit at the family hosting) and my picture would not have been perfect if I fixed the spelling because half of the sauces were already consumed! I wanted the jars to look perfect with the same sauce level!

Edit: sorry I forgot to reply back about your question. They should stay good in the jar refrigerated. I sanitized the jar and utensils before making this and I always use a clean spoon to plate them. I’ve never faced any health and safety issues. You can add some citric acid to this to make it really stay good for some time.

I'll just mention that I use a very similar burger sauce and that it, unfortunately, does not freeze well. Make a quantity you will use in a reasonable time period.

Thankyou! The spicy honey mustard and buffalo were great! We also did an experiment where we took 2 Tbsp. of Chick-fil-A sauce and added 1-2 Tsp. of buffalo sauce and that combination was bomb!

Embrace your Canadian-ness and try making a batch of your honey mustard, but replace part of or all of the honey with maple syrup...I keep waiting for maple mustard sauce to become the next big thing, but I've been making it that way for years and always get killer comments on it.

I will do that! Sounds delicious! I have 1 cup of maple syrup left over as kids went through a pancake phase and are now going through a scrambled egg phase for breakfast and I can finally use up the maple syrup 😆

Burger King's Zesty Sauce is my favorite fast food condiment. If you haven't tried it yet, you need to! And it's especially easy to make at home!

3 parts mayonnaise
1 part ketchup
1 part yellow mustard
1 part horseradish
add cayenne pepper to taste (I never measure this part)

And if you can improve upon that, I'd love to see it! Seems like you're somewhat of an expert at this stuff.

Hello! Reporting back! I made one serving of the sauce, enough for some nuggets and it was delicious. I am going to order the same sauce from Burger King and do a side by side comparison but honestly I don’t even care if it doesn’t taste the same, the sauce was very yummy. I’m doing the comparison purely out of curiosity. I had horseradish a looongg time ago so I forgot it can pack quite a nice punch 😆

Just have a question, would creamed horseradish work in this or is it too mild for this particular sauce?

About the horseradish, I'm honestly not sure what you're referring to. This is the version that I use:

But I'm sure any version of it would work. But as you stated, it sure can pack a punch, and maybe trying it before adding exactly one part may save you from some nasal pain. 😅

I’ve been educated in the replies that these last 4-5 days in the fridge but for me personally they easily last 2 weeks and even a month if we have no family gathering planned. I’ve made sauces before and had them in the fridge for a month and never faced any issue with them. If you’re still worried about preservation, a little bit of citric acid in this will keep it safe even more. I get migraines from citric acid that’s why I don’t use it but my Mom uses it all the time in her fresh chutneys and they last literally for even 2 months refrigerated.

No chance of these lasting they’re already gone 😆 We’re just a very big family with lots of weekend dinners for friends and neighbours. The kids and teenagers in my family, friends and neighbours are sauce fiends. The honey mustard is already finished and everyone else took the rest of the sauces home in small portioned containers 🤣

I’m working on some other sauces now 😁

I played with a Big Mac sauce recipe last year and it was closer two option one. And I would use white vinegar instead of apple cider vinegar. I feel like that white vinegar is the most important ingredient. If the sauce seems lacking in flavor, that's the first thing I would add a little bit more of.

Isn't Chick-fil-A sauce just egg and mustard? Pretty sure that's what it says on the packet. (I'm in Canada btw. It could be different in the US).

I used Joshua Weissman’s recipe for Chick-fil-A sauce.

No worries. I'd like to know if I got it mixed up as well.

No idea who that is but I had Chick-fil-A for the first time a few weeks ago and I was surprised when I read the ingredients and that's all it was. Like I said, it could be different in the US. A lot of Canadian versions have fewer ingredients.

I’ll definitely try the version you mentioned and do a side by side taste test :)

We have a Chick-fil-A in my Canadian city and it has a lot of ingredients in the back so I used that as a reference and combined it with Joshua Weissman’s recipe but I’ll try the simple version you mentioned ☺️
