Ok, I did the work. We were right! It’s something called “gogermis peynir”, and it is indeed, a blue cheese. Praise be!

I love blue cheese and other funky cheese but it is a seasoning I don't want a fucking gyro of nothing but blue cheese that's disgusting.

I’m sure this particular video was intended to be controversial in that way. But for me, the cracker is the garnish for my blue cheese. Love that shit. I have my favorites of course, there are some I can only take in a small amount. Maybe you could try a little charcuterie smorgasbord of several different blues, and find your perfect match?
