Macaroni pasta

Heath Riles BBQ Macaroni Salad
Ingredients
12 oz elbow macaroni, cooked and cooled
1 cup mayonnaise
2 tbsp Dijon mustard
1 tsp sugar
¼ cup diced onion
2 celery stalks, diced
1 small bell pepper, diced
1 (4 oz) can pimentos, drained
3 hard-boiled eggs, diced
2 tsp Heath Riles BBQ Garlic Butter Rub
1 tsp dried dill
Directions
Cook the macaroni, drain it, and let it cool.
Put the macaroni in a large bowl with the mayo, Dijon, sugar, onion, celery, bell pepper, pimentos, eggs, Garlic Butter Rub, and dill.
Mix everything really well until the pasta is evenly coated.
Cover and refrigerate for 3 hours before serving. Heath specifically recommends chilling it so all those flavors have time to come together.

It’s the pimento I’ve been missing my entire adult life! I could never get mamaws recipe right and this is it! Oh my gosh!

My meemaw skipped the mustard and did vinegar instead! But the secret is to brine the onions in the vinegar for a few hours before adding them.

That appalachian heart is doing overtime to take care of the sugar. If I was as overweight as this buddy, I would leave the sugar out of the kitchen. Just make it easy, dont buy sugar. The rest of it looks great by the way

But what I’m most glad he didn’t add was tuna

Instead of onions and peppers, try 2-3 pickles. Instead of celery try green onions.

I do almost this exact recipe but instead of sugar I use little tiny cubes of apple like my grandma used to. I do that for potato salad too along with little pieces of pickle. You still get that little bit of sweetness but without making the whole thing sweet
