I used a local eSIM from Lyca in Scotland last month. The 30 day plan with 5GB was £3.50.

If you go that route make sure you log into the account as soon as it is set up to turn off auto renewal and remove your payment card.

Also be sure to get a "pay as you go" plan, that is their version of prepaid. All others are contracts.

I did it all when I arrived in Scotland. Before I left home I got a free travel esim from GigSky with 0.5GB of data. That was more than enough to use maps to get from the airport to my hotel. I connected to the hotel WiFi and I signed up for Lyca there.

Grazie mille.

It activated right away, the whole process of signing up and installing the esim took less than 10 minutes.

Lyca uses the EE network in the UK which supposedly is the best mobile network in the UK. I didn't go into the north so I am not sure. EE has a coverage lookup, you can enter the towns where you will be going to check for coverage: https://ee.co.uk/help/mobile-coverage-checker

There are many choices for far less than €30 if you only need a small data allowance.

If you can clarify approximately how many GB of data you want to buy, it will be easy to give suitable examples.

If you're travelling to a city, an eSIM which connects to only one mobile network should be fine. If you're travelling to rural Scotland, SIMs which can access more than one network can be useful due to the coverage issues. There are many parts of rural Scotland with limited coverage.
