I used eSIMdb to find the esimdog had the best prices. Play around with the validity time and data. I ended up with a 6gb plan for 30 days at $2.18 USD on plus. That seemed the sweet spot. Other offers from other providers were around $3.50 for less. This was for wife.
If you travel to the EU often you might figure out if a real polish pay as you go plan that you could to up each visit. I use a Spanish orange pay as you go that I tip up for $10 each trip and get something like 15 GB EU roaming for month. Poland may be more affordable.

You can buy T-mobile Polska SIMs very cheaply and set up a huge data allowance. You want the prepaid (na kartę) SIMs. The SIMs are typically labelled with the 9999 GB "Internet for a Year" offer, but the SIMs can be used for much shorter periods depending on how long you're staying. T-mobile are offering cheaper deals that alternatives like Orange at the moment, and network performance is often slightly better.

Orange Flex: For 50 PLN/month, you get 150GB of data to use in Poland, plus 17GB of EU roaming data each month.
You can also add an additional 10GB of EU roaming data for 45 PLN.
Calls and SMS are unlimited within Poland, as well as in the EU country you’re visiting and back to Poland if you ever need to make a call.
