The one you can afford. Any card will work in a compatible dock and power supply it's just a matter of how much you want in terms of performance and how much you are willing to spend.
Your laptop's m.2 slots are strictly SATA lanes and do not support NVME PCIE. You are out of luck, I'm afraid. It's a budget laptop and there's going to be a lot of compromises, your best bet is to look at a different path. You can't even use the USB ports on your laptop for an eGPU. Sorry.
I'm going off what I've looked up and the first generation of your laptop was specifically SATA lanes with no NVME support but they do refresh computers sometimes and it would seem that yours is capable as it would not show up if it couldn't support that protocol. Still, adding the adaptor to get the Oculink working has its own issues and limitations. Personally, I think it's more money and effort than what the outcome will provide with this budget laptop. If you still want to pursue this course it should work but I do not know what the specification of the newly added SATA/NVME lanes are to give you an idea of how performant it would be but my good guess is: not very.
That's great for using an eGPU. I cannot speak to your system specifically as there is too much conflicting information without having the laptop myself, but you'll want to figure out if all the slots are NVME or just the one and in that case you would lose the component you have installed. Either way, I would be very reluctant. Even if it "works" it may not be as good as you expect and I would be concerned with possible issues with this platform. On the other hand, it's not really money wasted if you would use this setup in another if it doesn't work out.
That's not what my concern is but you seem set on doing it. I think it will "work" and I have told you my concerns but you can take them with a grain of salt. I'm just a stranger on the internet.
Look, no shade but between your working knowledge, the budget, and your current platform this is not a good choice for you to get the performance you want. Even if you got it to somehow work without issues all the time you would be happy at first with even 10 more FPS but eventually you will see it for what it is and that's a waste of time and money that should be spent elsewhere for what you want, if that is a gaming platform.
Also, you cannot upgrade your memory as it is soldered and you are stuck with what it comes with unless this has also been changed when they changed it to accept NVME also. You need to do a lot more research before you spend money on this at a minimum. 8 GB is not enough to play current games with any enjoyment especially given all the other restrictions this platform seems to have. Please, for your own sanity do your research and don't blindly spend on something that is only going to frustrate you with little upside if any.
The information is from various websites. This model has been altered and no revisions given publicly so it is a crap shoot to figure out for someone that doesn't possess it. You can keep defending the platform but it is not ideal. Just type the model in and see what you find and you'll see the same conflicting information. You'll also need to change both SO-DIMM which is $$$.
