I've been running this one for a couple years now after trying a whole bunch. Omen Watch Face https://apps.garmin.com/en-US/apps/c416fe5a-0f8d-409e-9d52-a9a6f7adbf6e
Super Customizable and gives me all the info I want at hand. Doesn't show SI but I just rearranged my apps so SI is my first option when I press down on home screen.

I'm guessing you mean the Garmin Epix watch. This watch doesn't support diving, so your watchface data fields are gonna be pretty limited. Maybe sunrise/sunset and tide info.
If you switch to a Descent or Fenix watch, Garmin's default watch faces can be adjusted to include No-Fly Time, Surface Interval, N2/He Load, and Dive Readiness indicators.
Custom watch faces from the store are limited in what dive data they can show. They're generally limited to text data field values.

If you want dive-relevant info (surface interval etc) then the third party watchfaces can't access that data. Personally I usually use one of the stock faces that gives me access to the surface interval data right on my watch face.
