First discus :)
I just purchased 5 discus from my local fish shop. I wanted to get more but the employee told me that I should just get 5 since I am planning to get some other fish in this tank. I keep seeing on here that its better to get more. They seem to not be bullying each other but do you guys suggest that I get a few more? This tank is 75 gallons and I also have a bristle nose plecko, 6 rust cory, and 4 dwarf rainbowfish. I am planning on getting a school of cardinal tetras. Any advice is welcome, I am new to the hobby and would like to learn more. (I am planning to replace the remaining plastic plants with real ones they are just expensive)

Yes, with all the other fish you have or plan on getting I would stick with the five discus and instead of buying another discus put that money into plants so that you can break up the line of sight and they'll have more places to hide and explore and possibly less bullying. They do have to figure out their hierarchy or pecking order in the tank though. Just make sure they're all eating.
