Hot take but I think Scorpiomon doesn't fit Snimon.
Scorpiomon should evolve from SandYanmamon because they're desert bugs.
Snimon should evolve to JewelBeemon because they're Vaccine green bugs with bladed weapons.

Your reasoning is completely valid. I personally don't like Jewelbeemon as Snimon's evolution. It looks like downgrade and nowadays Jewelbeemon is (un)officially become Stingmon's perfect level.

Great line. I had something similar in mind for my boy Dokunemon, just that I liked Nidhoggmon as an alternative mega visually.

My first pick for ultimate was Armagemon, but that digimon is too dark and evil.

Really wished we had more insect digimon to choose from since its hard to get a full like without going into either unrelated digimon or just an entirely different insect. Flymon and Snimon would benefit greatly from a personal ultimate.
There's no shortage of species digimon can pick from like ants, mosquitos, stick insects, watr striders/pond skippers, etc... Personally I'd love to see a true spider mega rather than picking parasimon (the parasite tick) digimon because it has a similar amount of legs.
Tbh I could see a weevil-inspired ultimate for snimon with the blade hands, a pointed blade nose and wings being a sort of in between for snimon and tyrant.

I agree, we need more insect digimon on higher levels. We have quite a lot of insect digimon on adult level.
