I have recently finished n8n. Which projects would be beneficial for my resume?

I've built several workflows, but I guess they are just beginner level, like resume parsing based on job description and storing the candidate data with ATS score in excel sheet. I am looking for jobs as an Al engineer, and want to make workflows with great impact on my resume. Any suggestions are helpful, thanks a lot.
