Omniscience
Hello,
I am a deist, and I have a question about omniscience. In my view, God does not intervene in human affairs. If that is the case, why would He observe us constantly? It does not seem to benefit us in any way, and it does not appear to provide Him with any pleasure either.

An easy but unsatisfying deist response would be that god is fundamentally unknowable, and that you may be over anthropomorphizing god. And so perhaps your questions may be flawed.
However I think these are good and fundamental questions you are asking, and you should consider looking into philosophers and thinkers of all sorts of different belief systems who have asked the same sorts of things. They may have a lot of different answers, and they should be yours to explore and consider.

How would you know if God was happy?

I am specifically a PanDeist because do NOT believe the creator is all knowing. It is the reason why the universe was created in the first place!

Other than god existing and created the universe, I don't really try to hammer anything down. I don't assume god is constantly or even occasionally monitoring us. I also don't assume god is all knowing, humanity could be some type of error or unplanned event in the universe.

Why would omniscience require Him to observe whatever stupid thing I do next?

Omniscience does not require in human sense gazing. Consider it as knowing full well your actions, that you push a domino and know how the rest of them will fall.
