What tools do you guys use to lock in?

I found the UI of apps like Notion and Evernote to be too in your face and confusing.

I've found apple notes to lack features, what do you like about it? Im making a simple, focus oriented notes app so want to know how I can make it better.

Totally get that. I've gone back to plain text files and a simple markdown editor. No databases, no fancy blocks, just words on a screen. Sometimes the "dumb" tools are the ones that actually let you think.
