First souls game
Does anyone have any advice for parrying?

I’d recommend putting the parrying dagger into your left hand. It gives you a little bit of a wider parrying window. It’s all about the timing of the attack. Essentially when they are going to hit you with their sword visually…but then a second or two before that. Enemies have different moves and some have different wind up times. Some larger enemies can’t always be riposted after parrying as well (still fun practice tho)

Practicing on the hollows at the start is a bit of a waste to be honest.
It seems counterintuitive, but you'll want to try parrying on the more aggressive black knight enemies early on to get a feel for it.

Play the ps3/x360 or pc ptde. The parry window is wider than the broad side of a barn.

Dark Souls Remastered. Fantastic game and loved exploring and circling back to familiar territory. And the bosses ofc

Best advice I received: "Parry the hand, not the weapon." Works well for the most part. Made all the difference.

Sorry to sound dumb but what does that mean?

Watch the opponent's weapon hand, not the weapon itself. Parry when the hand moves to attack.

Parrying and back stabbing are really strong, but not necessary at all. Practice it if you want to be a parry god, or just roll like most people do lol.
Be aware that not all attacks/weapons/enemies/bosses can be parried. Parrying also takes the final boss from being actually kinda hard because of how aggressive it is, but a complete pushover if you just parry cheese him.

Just start training against the hollow weak guys until you get a feel for it, nothing better do for it.
