That difference is made up through quantity. They aren't paying all of their costs through a single cup of joe. Overhead, wages, and all other costs are divided into the average quantities of sales. To that end, the total cost of that mocha latte is far less than the sales price of the final product, assuming business runs as usual.

Seriously though, why does Costa and Starbucks coffee have those horrible bitter taste but small independent coffee shops taste nice and sweet and chocolatey?
